Whole grain breakfast with amazing aromas. Whole grain breakfast with amazing aromas.
Number of Servings: 3


    1/2 c. Red River cereal
    1/2 c. large flake oats
    1/4 c. amaranth (whole grain)
    1 tsp. ground cinnamon
    1/2 tsp. green cardamom
    3 c. water


Boil 3 cups of water. Add amaranth and simmer for 10 minutes. Then add Red River, oats, cinnamon and cardamom and simmer for 10 more minutes, stirring occasionally.

Note: ground cardamom is OK but to really make this pop try to find green cardamom pods. While you are waiting to add the Red River and oats, open 3 or 4 pods and grind the seeds finely using a mortar and pestle. It's worth the effort! If you must use pre-ground cardamom, use a little extra.
