    Scallops, raw, 3 oz
    Sushi Rice, 0.5 cup
    sushi nori (seaweed, 1 sheet), 1 serving
    Mayonnaise, regular (mayo), 1 tbsp
    Avocados, California (Haas), 30 grams
    Celery, raw, 15 grams
    Smelt Roe, 1/2 tsp


Cook the sushi rice per instructions. When rice is sticky and slightly cooled, pat about 1/2 cup of it onto a sheet of sushi nori seaweed. Make sure it is fairly evenly distributed onto the sheet, and that it goes all the way out to the edges. Chop the raw scallops, mix them with one tablespoon of mayonnaise, and stir in about 1/2 tsp of smelt roe. Spoon it diagonally onto the rice. Add a thin slice of avocado, and 3 or 4 thin strips of celery. If desired, dribble a few drops of lemon juice on the mixture before rolling it up to look like an ice cream cone. Stick the bottom of the cone to itself with a few pieces of the sticky rice. Serves one.
