    For Filling:
    # Onions, raw, 1/2 medium (remove)
    # Garlic, 2 cloves (remove)
    # Spinach, fresh, 150 grams thawed, drained, and squeezed dry (remove)
    # Pepper, black, 1 dash (remove)
    # Pepper, red or cayenne, 0.25 tsp (remove)
    # Olive Oil, 1 1tsp (remove)

    For Sauce:
    # Avocados, Florida, 100 grams (remove)
    # Onions, raw, 50 grams (remove)
    # Olive Oil, 2 1tsp (remove)
    # Red Ripe Tomatoes, 1 cup cherry tomatoes (remove)
    # Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" (remove)
    # Parsnips, 100 grams (remove)
    # Carrots, raw, 50 grams (remove)
    # Garlic, 4 cloves
    # *Lemon Juice, 1 wedge yields (remove)
    # Green Tabasco Sauce, 12 drops
    # Alfalfa sprouts, 3 tbsp (remove)
    # Parmesan Cheese, shredded, 1 tbsp (remove)

    200 gram cooked whole wheat lasagna noodles, divided into 4 parts.


Heat oil in a large skillet over medium heat. Add onion; cook 10 minutes or until onion is browned, stirring occasionally. Stir in 2 cloves of chopped garlic and spinach. Reduce heat, cover, and cook 3 minutes or until spinach is tender. Set aside.

For Sauce:
Preheat oven to 350F
Arrange carrots, celeriac, peppers, onion garlic & tomatoes on a jelly-roll pan coated with olive oil. Sprinkle black pepper over vegetables; toss well.
Bake garlic and vegetables at 350° for 45 minutes, stirring vegetables every 15 minutes.
Separate garlic cloves, and squeeze to extract garlic pulp; discard skins. Set garlic pulp aside.
Mix avocado, garlic, oregano and lemon juice with roasted veggies and blend into a raw paste.

For Lasagna:
Spread 1/4 of the sauce in bottom of a 13 x 9-inch baking dish coated with cooking spray.
Arrange 1 part lasagna noodles over sauce; top with half of spinach mixture.
Top with 1 part lasagna noodles, 1/2 of sauce.
Layer 1 more lasagna noodles part, remaining spinach mixture, and remaining lasagna noodles. Top with remaining sauce.
Sprinkle with cheese.
Bake at 375° for 50 minutes or until lasagna is browned on top. Garnish with sprouts, if desired.
