the most delicious soup I have ever had! the most delicious soup I have ever had!
Number of Servings: 6


    4 c. vegetable broth
    1 T. butter
    1 c. chopped lg. onion
    1 c. chopped carrots
    3 cloves garlic (minced)
    1 t. Thyme
    1.5 t. salt
    2 c. chopped potato
    1 c. skim milk
    2 T. Flour
    1.5 c. cheddar cheese


Heat broth. saute onion, carrots and garlic in butter. add to broth along with potato, Thyme and salt. Bring to boil. Reduce to simmer. Whisk milk and flour together and add to broth. Bring to boil and cook until thickened. Remove from heat and add cheese. Even better the next day!
