Number of Servings: 6


    2 lbs. carrots, peeled & chopped
    2 C. chicken stock, fat free
    2 C. water
    1-1/2 tsp. salt
    1 Medium potato, peeled & chopped

    1 C. Onion, chopped
    1-2 Cloves garlic, crushed
    1/3 C. Cashews or Almonds, chopped
    3 Tbsp. butter

    1 C. Low Fat Plain Yogurt

    Seasonings: Nutmeg, cinnamon, mint leaf.


Add first 5 ingredients to large pot, boil for 12-15 minutes, until tender. Let cool.

Saute onion, garlic, cashews in butter.

After carrot mixture is cool, puree all ingredients in blender until smooth. Return to kettle and reheat. Add Yogurt, heat, and serve with desired seasonings.

Makes 6 servings.
