    Canola Oil, 4 1tsp
    1 medium Onion, thinly sliced
    Ground Mustard, 1 tsp
    Ground Cumin, 1 tsp
    Spinach, fresh, (10 oz)
    Firm Tofu, 10 oz., cubed


Heat 2 tsp of canola oil on medium-high heat in large skillet. Cook cubed tofu; brown on all sides. Transfer to plate and cover to keep warm. Add remaining 2 tsp of canola oil to pan. Cook onion in pan until translucent. Add ground mustard and cumin, stirring frequently , cooking until fragrant, about 3 min. Add fresh spinach to pan, cook until soft. Return tofu to pan. Serve over steamed jasmine or basmati rice.
