Number of Servings: 3


    20 oz of fresh mushrooms, mix the varieties
    1 medium shallot, minced very fine
    1 Tablespoon butter
    2 Tablespoons flour
    1 cup chicken broth
    1 12oz can evaporated skim milk
    salt and pepper to taste


Dice almost all the mushrooms up finely. Save a few of the smaller ones to garnish soup in the very final stages of cooking. Mince shallot. Add both to non stick skillet and saute with butter slowly until mushrooms start to give off their liquid. Continue to cook until they are quite dry. Add flour 1 Tablespoon at a time and stir until well incorporated. Add chicken stock and cook slowly until thickened. Add the can of evaporated milk and again heat slowly til thickened. Season with salt and pepper to taste. Add what ever final mushrooms you have to garnish with and cook a few more minutes stirring carefully to not let soup stick or burn. I usually use small mushrooms such as Enoki to do this final step. Serves 3

  • I doubled this recipe and liked it better the second time I made it since to go through the process of making homemade soup, I would prefer to have more on hand. I added dry sherry towards the end for a dash of flavor as well. Approx 2 TB. - 1/28/09
