    1 cup frozen corn
    1 cup cooked brown rice
    1 tomato
    .25 cup chooped green pepper
    .25 cup chopped scallions
    .25 cup cilantro or parsley

    1 tablespoon wine vinegar
    1 tablespoon water
    1 tablespoon low-sodium soy sauce
    .25 Dijon mustard
    several dashes Tabasco sauce


Thaw corn in colander under running water. Mix with brown rice, tomato, green pepper, scallions, cilantro in a serving dish. In a small jar or bowl, mix the dressing ingredients together thoroughly. Pour the dressing over the salad and mix well. For the best flavor, cover and chill for at least 2 hours.
