    1 small yellow onion, finely chopped
    1 cup minced fresh parsely
    .5 cup minced red or green pepper
    2 large cloves of garlic, crushed
    1 teaspoon cumin
    .25 cup water
    3 (15) ounce cans low-sodium, water-packed garbanzo beans, undrained
    .5 cups water
    .25 cups fresh-squeezed lemon juice


In a large soup pot, sauté the onion, parsley, pepper, garlic and cumin in the .25 cup water until the vegetables are tender. Meanwhile, place the garbanzo beans and their liquid in a blender or food processor and puree. Add to the vegetables along with the .5 cup water and lemon juice. Simmer, covered, for 20 minutes. Add cayenne to taste before serving.
