Ingredients

    2 Cups Frozen Diced Potatoes
    1 Cup Cooked Lean Ham, Diced
    1/2 CXup Fresh Mushrooms Slice
    1/4 Cup Onion or Green Onion
    1 1/4 Cup Egg Substitute
    1/2 Cup Skim Milk
    1/2 Cup Reduced-Fat Cheddar Cheese Shredded

Directions

Preheat oven to 325

Lightley coat a 9x13 baking dish with cooking spray.

Layer potatoes wvwnley on bottom of dish; top with ham mushrooms, and onions.

In a small mixing bowl, beat egg substitute and skim milk mblend well.

Pour egg mixture over ham and vegetables, ro with cheese.

Bake until eggs are firm and top is lightly browned, approximately 40 minutes.

Cut into 4 portions
