A tasty way to get some healthy spinach into your diet! A tasty way to get some healthy spinach into your diet!
Number of Servings: 8


    1 frozen or refrigerated pie crust
    4 slices bacon, raw, chopped
    1/2 raw onion, chopped
    1/2 pound fresh or frozen spinach
    4 large eggs
    1/2 cup nonfat milk
    4 oz Swiss cheese, shredded


Preheat oven to 400.

Roll out pie crust to fit a 10" tart pan. Place crust in tart pan, remove excess overhanging dough. Put a double layer of aluminum foil on top of the pie crust, push down, this will weight down the crust. Bake crust for 10min. Remove foil, bake an additional 5min. Remove from oven, cool. Turn oven down to 350.

While pie crust cooks, cook bacon in a large skillet. Add onions, cook until onions soft and bacon par-cooked. Add spinach to pan. Salt as desired (a few dashes). Cook until spinach wilted and cooked. Remove from heat, cool.

Combine eggs, milk and half the cheese. Salt as desired (a few dashes). Beat until well mixed.

Spread spinach mixture over the bottom of baked crust. Pour egg mixture over spinach. Sprinkle remaining cheese over the top of tart.

Bake at 350 for 35-45 minutes or until tart is slightly puffed and cheese is browned lightly.
