Ingredients

    11/2 lb extra lean ground beef
    1 large onion, chopped
    4 cloves garlic, chopped
    2 10 oz cans green enchilada sauce
    1 16 oz can fat free refried beans
    10 oz follow your heart vegan monterey jack cheese alternative, shredded
    13 white corn tortillas

Directions

In a large skillet brown the ground beef with the onions and the garlic.
When the beef and onions are cooked through add 1 can of the green enchilada sauce.
In a 9 x 13 baking dish that has been lightly sprayed with cooking oil add a thin layer of green enchilada sauce.
Add a layer of three tortillas (cut to fit if needed).
Add a layer of 1/3 of the refried beans.
Add of layer of 1/3 of the meat mixture.
Add a layer of 1/4 of the shredded cheese.
Continue to layer in the same manner for 2 more complete layers.
Finish with a layer of 4 tortillas (cut to fit if needed).
Top with the remaining green enchilada sauce and shredded cheese.
Bake in a 350 oven for about 30 minutes or until the cheese is melted and the casserole is heated through.
Makes 8 portions.

    Very Good
    I used this recipe as a starting point for my own enchilada casserole. I added green chiles and diced tomatoes to the meat mixture for some extra flavor and bulk. I also used whole wheat flour tortillas. Very good! - 2/4/10

    Very good. My husband doesn't eat meat so I substituted ground beef for Boca Crumbles. I couldn't tell the difference. I also used 2% monterey jack cheese. Great for leftovers! - 8/22/09

    Can anyone tell me if the alternative monterey is lactose free?? - 7/16/09

    The brand I use is dairy and wheat free. So yes it is lactose free too.

    My family thought it was great. I think you could spice it up a bit if you were to brown the ground beef with some taco seasoning. Would add a little extra kick. - 6/18/09

    Used Flour Tortilla and a 8X8 inch pan. Good but a little bland. If I made it again I would stir in some cumin into the meat and top with diced tomatos and cilantro. - 3/23/09

    I used ground turkey, but I think beef would make it better. torillas come in packs of 12, so I just got the bigger size instead of buying two packs. I also used regular refried beans. Was good reheated too. - 2/14/09
