Ingredients

11/2 lb extra lean ground beef
1 large onion, chopped
4 cloves garlic, chopped
2 10 oz cans green enchilada sauce
1 16 oz can fat free refried beans
10 oz follow your heart vegan monterey jack cheese alternative, shredded
13 white corn tortillas
Directions
In a large skillet brown the ground beef with the onions and the garlic.
When the beef and onions are cooked through add 1 can of the green enchilada sauce.
In a 9 x 13 baking dish that has been lightly sprayed with cooking oil add a thin layer of green enchilada sauce.
Add a layer of three tortillas (cut to fit if needed).
Add a layer of 1/3 of the refried beans.
Add of layer of 1/3 of the meat mixture.
Add a layer of 1/4 of the shredded cheese.
Continue to layer in the same manner for 2 more complete layers.
Finish with a layer of 4 tortillas (cut to fit if needed).
Top with the remaining green enchilada sauce and shredded cheese.
Bake in a 350 oven for about 30 minutes or until the cheese is melted and the casserole is heated through.
Makes 8 portions.
