Number of Servings: 4


    Olive Oil, 2 tbsp
    Onions, raw, 1 small, diced
    Garlic, 2 cloves, finley chopped
    Pepper, red or cayenne, 1/4 tsp
    Cumin, 1/2 tsp
    Chile powder, 1/2 tsp
    2 plum tomatoes, chopped
    Beans, black, 2 cups cooked or one large can
    1 cup water
    Parsley, dried, 1 tbsp
    White Rice, long grain, 4 cup, cooked
    Cooked Chicken, light meat, 2 cup, chopped or diced (remove)


Heat oil in skillet over medium heat, saute onion and garlic until clear ( do not brown). Stir in spices and cook for 1 min. Stir in tomatoes, beans, and water and simmer for 15 - 20 min, stirring occasionally or until thickened. Stir in Parsley.
Serve over rice and add shredded cheese, avocado, sour cream, etc.
