Number of Servings: 4


    1 Teaspoon Extra Virgin Olive Oil
    4 Small Chicken Breasts 500 grams
    Grated Rind and Juice of 2 Lemons
    1 Tablespoon Gradted Fresh Ginger ( I have used half a teaspoon of powdered)
    1 Teaspoon Chicken Stock Powder
    1/2 Cup White Wine
    3 Tablespoons Honey
    1 Teaspoon Cornflour
    1 Tablespoon Water
    500g Packet Birds Eye Special Fried Rice


1 Heat oil in a large frypan, add chicken and cook for 5 minutes or until browned.
2 Add lemon rind, juice,ginger,wine and stock powder, cover and simmer for 5 minutes.
3. Meanwhile cook Special Fried Rice in microwave safe dish for 7 minutes (750 watts)
4 Add honey and combined cornflour and water to pan and stir till sauce boils and thickens.
5 Spoon rice on to plate, top with slced chicken breast and drizzle with sauce.
