Ingredients

    1 lb. ex. lean ground beef
    796 ml can of diced no salt tomatoes
    1 284 (10 fl. oz.) can tomatoe soup
    1 pouch (3 serving size) Lipton onion soup mix
    2 pkgs. Oxo low salt beef bouillon
    2/3 cup pearl barley
    2 med. cooking onions, diced (about 1.5 cups)
    3 large carrots, peeled and diced
    4 large stalks celery, diced
    1 cup frozen peas
    1/2 tsp. black pepper
    3 whole bay leaves
    2 tbsp minced garlic (about 6 cloves)
    7 cups boiling water


Directions

Brown lean ground beef then drain onto paper towels to de-fat. Add to a large crock pot with tomatoes, tomatoe soup, bouillon, onion soup mix and barley. Wash and dice celery, peeled carrots and onions. Add to pot. Place whole bay leaves on veggies and sprinkle with pepper and minced garlic. Pour 7 cups of boiled water on top. Cook on low for about 7 -8 hours. Stir half way through if possible. Half hour before serving, stir in frozen green peas to heat through. A very thick soup, add 1 cup more water to thin if desired. Recipe makes about 14 cups, or 9 1.5 cup servings.
