    2 Cups Eggplant, peeled and cubed
    2 cups zucchini, sliced
    1 1/2 cups onion, chopped
    1/2 cup celery, sliced
    1 tablespoon paprika
    2 teaspoons oregano, dried
    2 teaspoons basil, dried
    1/2 teaspoon cayenne, dried
    1 can tomatoes (16 oz)
    1 can vegetable broth (16 oz)
    1 can chickpeas (16 oz)
    1 1/2 cups brown rice
    1/2 cup water


Saute eggplant and next 7 ingredients in a small amount of water for 1 minute. Stir in tomatoes and broth, bring to a boil. Add chick peas, rice and water and stir well. Spoon rice mixture into a 13 x 9 inch baking dish. Cover and bake at 375 degrees for 40 minutes to one hour or until rice is tender. Serving size is 1 1/2 cups. Serves 6
