    S&W Black Beans (3-1/2 servings per can), 19 oz - Any brand of Black beans will do.
    Green Peppers (bell peppers), 1 cup, chopped - 1 medium size pepper
    Onions, raw, 1 large
    Olive Oil, 1 tbsp
    Garlic, 6 cloves
    Cumin seed, 2 tbsp
    Chili powder, 2 tbsp
    Cider Vinegar, 1 tbsp
    Turkey Polish or Smoked Sausage, 4 oz o
    Cajun Brand Hot Links (one sausage), 1 serving - okay to substitute Turkey sausage if you don't want the added spiciness.
    La Victoria Salsa Picante, Medium, 6 tbsp
    Brown Rice, long grain, 2.5 cup Cooked.


This versitile recipe could easily be made vegan by taking out the sausages and substituting a second can of beans.

Heat olive oil in a large skillet, added finely chopped garlic, green pepper, and onion. Saute until onion starts becoming translucent.
Thinly slice both sausages and add them to the skillet.
Add ground cumin and chili powder, mix well.
Pour in black beans including liquid. Pour vinegar into beans can and stir up any remaining residue in can and add to pan. Stir all well, cover, and reduce heat to simmer. Cook for 20 minutes. Add Salsa just before servineg. Serve over brown rice.
Note - 1 cup uncooked brown rice is equivelent to approximately 2.5 cups cooked and fluffed.
