Hearty chicken soup in one variation that we use in Costa Rica Hearty chicken soup in one variation that we use in Costa Rica
Number of Servings: 5


    1 medium onion, finely chopped
    3 stalks celery, about 4" long each, finely chopped
    1 medium carrot, finely sliced
    1 large potato, diced
    15 ounces cooked chicken breast
    3 cups chicken broth, no salt added
    100 yucca cut in medium size pieces
    salt and pepper to taste
    1 Goya seasoning package with annato
    1 cup warm water or more to taste
    3 tbsp cilantro


In a large pot, add chicken broth, water, yucca and potatoes. Bring to a boil. Reduce to medium high heat and add onions, celery, carrots, chicken breast and seasonigs. Let simmer for about 10 minutes or until all vegetables are cooked to taste.
Makes about 5 servings. Accompany with rice.
