Introduction

This soup is perfect on those cold winter nights. Easy to throw together and just let cook all day long. This soup is perfect on those cold winter nights. Easy to throw together and just let cook all day long.
Number of Servings: 10

Ingredients

    5 potatoes, peeled and cubed
    2 onions, chopped
    1 carrot, pared and sliced
    1 celery stalk, sliced
    4 chicken bouillon cubes
    1 T parsley
    5 c. water
    1 T salt
    1/3 c. butter
    1 can (13oz) evaporated milk
    2 c. shredded cheese

Directions

Add all ingredients except milk and cheese to a 4 quart crockpot. Cook on low for 10 hours. Right before serving add milk and cheese. Use potato masher to blend (or puree in blender). Serve. Makes 10, 2 cup serving.

If using a 6 quart crockpot add an extra potato.
