    2 links low fat sweet supermarket brand italian sausage ( can use spicy if desired)
    6 turkey bacon strips thinly chopped
    1 medium onion, chopped
    2 medium red ripe tomatoes, chopped
    3 small celery stalks, about 4" long each, chopped
    1 small can of corn
    1 tsp ground cumin
    2 pkgs Goya sazon with annato
    1 tbsp salt or more to taste
    Black bean soup, canned (can substitute with 3 cup of homemade black bean soup for fewer calories)
    1 cup warm water or more to taste
    3 tbsp cilantro finely chopped
    2 tbsp taco blend or LatinAmerican queso fresco crumbled on top (per serving)


In a pot large enough, in medium high heat, brown sausage and bacon together, stirring to crumb, for about 4 minutes until they are mostly cooked. Drain extra fat.
Add onion and cook for about 2 minutes. Add celery, corn, tomatoes and seasonings. Cook for one more minute to mix. Add black bean soup and water.
Let it simmer for about ten minutes. A couple of minutes before serving, add cilantro and stir. Take from heat.
Add about 2 tbsp cumbled queso blanco (or taco blend cheese) on top of each plate right before serving.
Makes about 10 half-cup servings
