    1tbsp olive oil
    300 grams or one boneless chicken thigh, shredded
    1 cup red and green peppers, strips
    1/2 cup onion, chopped
    1/2 cup water
    1 can (15 oz) chickpeas, rinsed
    1 can (12 oz) corn
    seasoning to taste


In a skillet, heat olive oil and cook chicken for about four or five minutes or until mostly cooked. Add onions and peppers and cook for about more three minutes. Add garbanzos, corn, water and seasonings. Heat thoroughly. Can be served with a side salad and a serving of rice.
