I use all frozen or pre-packaged veggies with this, along with canned chicken. I use all frozen or pre-packaged veggies with this, along with canned chicken.
Number of Servings: 4


    1/2 cup Whole Grain Quinoa (uncooked)
    1 can *Kirkland chicken breast (Costco)
    2 cups frozen Broccoli-Cauliflower mix
    1/2 cup Spinach, frozen
    1 tbsp Onion, chopped
    2 tsp chopped Garlic
    1 tsp Butter, unsalted
    1/4 cup Parmesan Cheese, grated


Boil the quinoa in 1 cup water plus the liquid from the canned chicken. While that is boiling, melt butter and saute onion & garlic in large skillet. Reduce heat to low and add frozen vegetables and chicken, cover. The veggies will thaw and cook while you are waiting for the quinoa to finish cooking. When the quinoa is done (about 15 min), drain and add to skillet. Sprinkle with the parmesan cheese and mix well.

Makes 4 servings.
