Introduction

Ingredients

    GV Navy Beans, dry, 3.25 cup
    Water, tap, 8 cup (8 fl oz)
    Onions, raw, 1 cup, chopped
    Wright's Hickory Smoked Sliced Bacon, 1 slice cut into small pieces

Directions

Place bacon pieces in large pot and fry until clear with edges brown, if you like. Add onion and saute until the onions are clear. Add beans and stir to coat them with oil from bacon. Add water and bring to a boil. Lower heat and simmer for about 1 to 1 1/2 hours until beans are tender. This makes about 10 servings - 1 cup each. You can add smoked sausage to the beans about a half hour before they are done.

    Soaked 2 cups dry beans overnight, w/baking soda (great tip!). Used pound of honey & maple bacon, fried slightly crispy. Sauteed onions until caramelized. Used 2 cans chicken broth. Added bacon & onions & teaspoon minced garlic to beans & broth in crock pot on high for six hours. Fabulous! - 9/8/11

    couple of hints. I add baking soda to the water then bring to a boil, allow to boil for 2 minutes. Turn off heat cover and let sit for an hour. Drain water off, use chicken broth to cook beans in. Add's flavor and the baking soda before hand reduced gas. - 2/27/11

    I have a couple questions: One is the recipe says 1 slice of bacon, I assume that it should be 1 pound, and also I assume that it is calling for 8 cups of water at 8 oz. each cup for a total of 64 oz. Is this correct? - 2/16/18

    Incredible!
    I used vegetable broth & added bacon bits before serving and served over rice,my hubby added hot sauce to his, he loved it.
    Very tasty.

    Very Good
    Improvised a bit because I only had a can of navy beans, which made it quick and easy. Adding the turkey smoked sausage provided thre right amount of seasoning for the beans. Will definitely make this again. - 3/3/10

    I used garlic powder,next time I will try real garlic.

    reciepe say's 2 pieces per serving does that mean 20 slices of bacon per reciepe? - 1/27/09

    Actually, you use only 1 slice of bacon. Or less if you prefer. I use between 1 and 2. Cut the bacon into small pieces and cook until done, Then add your onions, etc. to this. Hope this is clearer for you. (I have edited the recipe to show this)
