    4 cupsZucchini, shredded
    1/2 cup Onions, raw chopped
    1 cup Picante, Mild,
    1/2 cup Kraft Minute Whole Grain Brown Rice,
    1/4 cup Kraft 2% Shredded Cheddar Cheese


Mix zucchini, onions, picante sauce and dry minute rice. Bake 30 minutes 350 degrees until the rice is done, top with cheese while still hot. Salt and Pepper to taste. Approx 8 one cup servings.

  • This was very easy and good! I used salsa instead of picante and added a tiny bit of water. Good use for the ever abundant zucchini! - 7/14/09

    Thank you for the comment. I have a cookbook made of squash recipes. Here is one that is really good on SparkRecipes. It can be cooked with a little water and margarine instead of olive oil. Or wrapped in foil and grilled.
