    Makes 4 servings

    2 TBS orange juice
    2 TBS Dijon mustard
    1/2 TSP reduced sodium soy sauce
    3/4 C whole wheat cracker crumbs
    1 TBS grated orange zest (from peel)
    1/4 TSP onion powder
    1/4 TSP ground pepper
    1/4 TSP salt
    4 3 oz skinless, boneless chicken breasts


1. Pre-heat oven to 350, spray a non-stick baking sheet with non-stick cooking spray

2. In small bowl, combine OJ, mustard and soy sauce. On a plate combine cracker crumbs, ornage zest, onion powder, salt and pepper

3. Dip chicken in mustard soy sauce, then dredge in crumb mixture - pressing the crumbs firmly to the chicken.

4. Place on baking sheet and cook for 15 min, then turn and cook for 15-20 more.
