These are easy and delicious! Even my non-vegetarian husband loves them. These are easy and delicious! Even my non-vegetarian husband loves them.
Number of Servings: 8


    16 (approx) small corn tortillas
    1 can Mexicorn, drained (corn with red peppers and seasonings)
    1 can black beans, drained and rinsed
    3/4 cup fresh salsa
    1 pkg Mexican style taco cheese
    3 TBS corn oil, for frying
    If you wish, you can also add fresh chopped cilantro.


Mix the black beans, corn, salsa and cilantro together with a little oil in a pan over medium heat. Allow the mixture to bubble a bit and thicken up, you don't want a lot of liquid in your quesadillas. Begin heating up a tiny bit of corn oil in a skillet for the tortillas. When the bean mixture is beginning to thicken, remove it from heat. Place a tortilla in the frying pan, sprinkle with cheese and a spoonful of the bean mixture. Be careful not to overfill! Sprinkle a little cheese on top of the beans and top with another tortilla. Fry until both sides are beginning to get crispy.
