Tom's great pork/eggplant recipe. YUM! Tom's great pork/eggplant recipe. YUM!
Number of Servings: 4


    1lb ground pork
    1tbsp minced garlic
    1tbsp minced ginger
    1/4c soy sauce
    1 eggplant (approx. 1lb)


1. Mix 1/2 garlic & ginger w. pork and marinate for 1 -2hours
2. Cut eggplant into thick slices - about 1 1/2"
3. Slit eggplant lengthwise creating a pocket.
4. Fill with between 1-2tbsp pork mixture.
5. Put in non-stick pan with soy sauce, remaining ginger & garlic.
6. Cook on low heat, covered, for about 45 minutes until pork is cooked and eggplant is tender.

Serve over rice.
