    * Parmesan Cheese, hard, 1 oz (you can use soy cheese!)
    * Carrots, raw, 1 cup, chopped
    * Celery, raw, 1 cup, diced
    * Onions, raw, 1 medium (2-1/2" dia)
    * Olive Oil, 3 tbsp
    * Canned Tomatoes, 1 can
    * *Potato, raw, 3 cup diced
    * Water, tap, 2 cup

Directions

Sautee onion in oil,
then add all ingredients,
top with a bit of oregano, basil, salt, pepper, red pepper flakes, fresh minced garlic, a little water, and let simmer 1 hour
