Number of Servings: 24


    3 1/3 Cup whole wheat flour
    1 Tbs Baking Powder
    2 tsp Baking Soda
    1 1/2 Cup sugar
    1 tsp cinnamon
    1 tsp nutmeg
    1/2 tsp allspice
    1/3 Cup lowfat Buttermilk
    1/3 Cup Canola oil
    2/3 cup Water
    2 cup cooked pumpkin
    4 eggs
    1/2 Cup dried cranberries or raisins


Preheat oven to 350.

Mix liquid ingredients then add the dry, mixing well.

Measure mix into medium cup muffin tin. Cook 30 to 40 minutes, check doneness with a toothpick, if the toothpick is clean the muffins are done. Cool on a rack before serving.

If cooking a loaf, bake for 45 minutes to 1 hour.
