Ingredients

*Flour, white, 1.75 cup
Baking Powder, 1.5 tsp
Salt, .25 tsp
Egg, fresh, 2 large
Granulated Sugar, .75 cup
Butter, salted, 3 tbsp
Almonds, .33 cup, whole
Cranberries, dried, sweetened (craisins), .75 cup
Directions
Preheat oven to 350F. Line a large baking sheet with parchment paper.In a bowl, whisk the flour, baking soda and salt.
In a medium bowl, beat eggs with the sugar until pale and creamy. Beat in the melted butter and almond extract. Pour the egg mixture over the ingredients and stir until combined. If mixture is too crumble add a small amount of applesause until the dough sticks together. Stir in cranberrie sand almonds.
Using floured hands, shape the dough into two slightly flattened 10-inch logs on the prepared baking sheet. Bake for 30 minutes or until golden. Let the logs cool slightly.
Using a sharp serrated knife, slice the logs 1/2 inch thick on the diagonal. Arrange the slices on the baking sheet cut side up and bake for about 10-15 minutes, or until biscotti is lightly browned and crisp. Let cool completely before serving.
