Ingredients

    2 cups cracked wheat
    4 cups water
    1medium tomato chopped
    1large shallot chopped fine
    1/2 cup green peas
    1/2 cup chopped french beans
    1/2 cup chopped carrots
    4green chillies slit lengthwise
    Salt to taste(sea salt)
    1tbsp ghee (clarified Butter)
    1 tsp mustard seeds (black)
    1/2 cumin seeds
    1/2 asafoetida powder (hing)
    8 curry leaves
    5 tbsp chopped green coriander (cilantro) leaves for garnish
    1/2 cup fresh grated coconut for garnish (optional)

Directions

Dry roast the cracked wheat in a wok till change in colour.This gives out an appetising aroma when done.Remove and keep aside.Heat ghee in another pan and add mustard seeds,cumin seeds,asafoetida powder and the curry leaves.When these sputter,add the chopped shallots and cook these till transclucent.Add green chillies and chopped tomatoes and cook till tomatoes have softened and released the juice.Add the roasted wheat and mix well together. Now add the chopped vegetables and salt to taste.Pour in 4 cups of boiling water.Cover and steam till the water is absorbed.The consistency should be dry and spongy.Garnish with chopped fresh coriander (cilantro) and shredded fresh coconut and serve hot.
