    1 1/2 cups of broccoli, chopped
    1 small onion, chopped
    4 cloves of garlic, chopped
    1 large red tomato, thinly sliced
    6 large eggs
    1/2 cup of part skim Mozzarella cheese, grated
    1/4 cup tomato sauce or marinara sauce
    1/2 tbsp dried Rosemary
    1/2 tbsp dried Thyme
    1 tsp Salt
    1 tsp Freshly ground black pepper


Preheat oven to 425 degrees F.
In a cast iron skillet, sautee the onion in olive oil until transulcent.
Add the garlic, and sautee until fragrant.
Remove from heat.
In medium bowl, whisk eggs and tomato sauce.
Add broccoli, cheese, onion and garlic, herbs and spices to egg mixture, stirring well.
Spray the bottom and sides of skillet with Pam.
Pour egg/broccoli mixture into skillet.
Heat the skillet over medium heat until egg begins to cook around the edges (roughly 3 minutes).
Cover the top of quiche with the sliced tomato.
Put skillet in the oven and cook for about 15 minutes, until edges are slightly browned.
Cut into 4 large pieces.
