Introduction

High protein, high fiber, super filling oatmeal pancakes. They're amazing plain, with natural peanut butter, or some cinnamon cream cheese. High protein, high fiber, super filling oatmeal pancakes. They're amazing plain, with natural peanut butter, or some cinnamon cream cheese.

Ingredients

    1 c old fashioned oats
    3/4 c whole wheat flour
    4 tbs ground flax seed
    1 tsp baking soda
    3/4 tsp baking powder
    1/2-3/4 tbs salt
    .75 tbs any oil (coconut, olive, canola)
    2 scoops protein powder (vanilla is good)
    2 tsp cinnamon
    1/2 large apple chopped
    splenda or sugar to taste

Directions

put oatmeal in large bowl with 2 c water. Cook until soft. Then add protein powder. Whey protein works great. Add flour, eggs, splenda, salt, baking powder, baking soda, flax, cinnamon and chopped apples. Add more water until mix is a gooey, thick texture. Cook on greased skillet like pancakes. This recipe should make 12-13 thick pancakes about 4-5 inches in diameter.
