Introduction

Ingredients

    1 box of chicken broth
    2 chicken breasts
    4 medium potatoes, peeled and cut into cubes
    Carrots, chopped or whole baby carrots
    1/2 to 1 onion, diced
    1 can kidney beans
    1 can corn
    1 can diced tomatoes
    1 clove garlic, minced
    package of taco seasoning
    Salt and pepper to taste
    Pinch of basil, oregano, onion powder, lemon pepper, or whatever spices you have on hand
    1 bay leaf

Directions

Prep all ingredients except chicken and set to simmer in large pot. I broiled my chicken on high, 10 minutes each side, but you can cook it however you like. Let simmer about an hour on low/medium heat, maybe more, until the potatoes and carrots are soft. Serve alone or with tortilla chips and low-fat sour cream. Yum!
