Introduction

A thick soup perfect for those cold winter days, but it's good any season. High in fiber and vitamins. The carbs might be high but they're good ones. A thick soup perfect for those cold winter days, but it's good any season. High in fiber and vitamins. The carbs might be high but they're good ones.

Ingredients

    6 cups of water (or chicken broth)
    1 cup chopped smoked turkey (or ham)
    1 cup canneloni beans (white northern beans)
    3 stalks celery chopped
    1 med onion chopped
    3 large carrots chopped
    1 large potato cubed
    1/4 cup barley, raw
    pepper to taste

Directions

Bring water or broth to a boil. Add all ingredients, bring to a boil then lower heat and simmer one hour or less.
