Number of Servings: 6


    6 red potatoes
    3 tbsp extra virgin olive oil
    2 tsp minced garlic
    1 tbsp lemon juice
    1 tbsp fresh rosemary
    salt to taste


Pre-heat oven to 400 degrees. Scrub potatoes and pat dry. Cut into quarters lengthwise. Wisk together olive oil, garlic and lemon juice. Toss with potatoes coating each piece. Arrange potatoes skin side down in a baking dish and cook for 45 minutes or until golden brown. Sprinkle with salt and serve.
Can also be cooked at lower temperatures for longer.
