    1 Tablespoon canola oil
    1/2 cup chopped onions
    1/2 cup chopped celery
    1/2 cup chopped carrots
    1/4 cup chopped lean ham
    2 teaspoons minced garlic
    1 bay leaf
    salt & pepper to taste
    green onions, chopped, for garnish


Heat oil in a heavy pot over medium-high heat. Add onions, celery, carrot, ham, and garlic. Cook and stir 2 minutes. Reduce heat to medium-low and cook until vegetables are tender, stirring occasionally.

Add Chicken broth, lentils, and bay leaf. Bring to a boil. Reduce heat and simmer uncovered until lentils are tender, stirring once and a while - about 20 minutes. Discard bay leaf.

Season to taste with salt and pepper, thining with more broth or water, if desired. Ladle into soup bowls. Garnish with chopped green onions if you wish.

    I was sure I typed it in, but I guess not - 1 pound or 2 cups lentils and 7 cups chicken broth. I am making this today as it is snowy. I am sure it is in the list where they calculated the calories, so that is correct.
