Ingredients

    onions
    zucchini
    eggplant
    red bell pepper
    mushrooms
    olive oil
    fresh rosemary
    fresh thyme
    salt
    pepper

Directions

Cut up veggies pretty coursely. I like my zucchini seeded so they do not get soggy.

Drizzle with olive oil. Add seasonings and toss well.

Bake at 350 until tender but not mushy. Approximately 30 minutes.
