Introduction

Number of Servings: 8

Ingredients

    2 C frozen chopped broccoli
    1 1/2 C elbow macaroni
    1 med onion, chopped
    2 cloves garlic, minced
    2 T butter
    5 med tomatoes, peeled & chopped
    1 C fresh parsley, chopped
    1 t sodium-free chicken bouillon
    1/4 t salt
    1/4 t dried oregano
    1/4 t dried basil
    1 C shredded cheddar

Directions

Thaw broccoli. Cook pasta and drain. Saute onion and garlic in the butter. Add tomatoes, parsley, bouillon, salt, oregano, and basil. Bring to a boil then reduce, cover, and simmer 3 minutes. Stir in the pasta and 1/2 of the cheese. Add broccoli. Transfer to a 8 x 8" pan that has been sprayed with cooking spray and bake covered for 15 min at 375 degrees. Sprinkle with remaining cheese and bake, uncovered, for 5 more minutes. Serves 8.

    Loved this and might add some chicken or tuna as protein as a lunch and or dinner. Also has anyone tried laughing cow cheese wedges as a substitute as cheese. It is so delicious melted. - 1/31/09
