Introduction

Number of Servings: 10

Ingredients

    1 can tomato sauce
    1 can small petitie tomoatoes
    1 small eggplant
    1 small onion
    3 cloves garlic
    1 cup red sweet wine
    2 cups water
    salt and pepper to taste
    2 TBLS sweet dried basil leaves
    1/2 tsp died rosemary crushed
    1 tsp dried oregano leaves
    2 TBLS oil
    8 oz fresh mushrooms

Directions

Heat oil in a 10-inch iron cast skillet. Add onion, garlic and eggplant and cook on medium high covered until browned. Add mushrooms and continue cooking until onions are wilted. Add wine and spices and cook until reduced. Add tomatoes and sauce and water and reduce heat till it simmers slowly and let simmer for 40 mns.
