This is an awesome appetizer recipe. Everyone loves it! I'm sure you will too!
I like to mix it up ahead of time and put it in the fridge. I also cut up the pita bread before I put the mixture on it. It's prettier for appetizers when it's drop by spoonfuls onto the bread. More tedious, but prettier.

Ingredients

    3 lbs. Chicken Breast, boiled and shredded
    Enough water to cover chicken
    1 tsp. Lemon Pepper Seasoning
    8 oz. Philladelphia Light Cream Cheese
    1 1/2 cups Cheddar or Colby Cheese, Low Fat-softened
    1/2 cup Light Sour Cream
    2 Cloves Minced Garlic
    1 tsp. Ground Cumin
    1 tsp. Chili Powder
    1/2 tsp.Ground Coriander
    1/4 tsp. Salt
    1/8 tsp. Pepper
    3 Green Onions Chopped
    1/4 cup Red Onion, Chopped
    1-3 Tbsp. Pickled Chopped Jalepeno Peppers
    6 (6in.) Whole Wheat Pita Bread Rounds
    Garnish: Sliced ripe olives, sliced green onions, shredded Cheddar or Colby Cheese

Directions

Comine first 3 ingredients in a large sauce pan; bring to a boil. Cover and reduce heat and simmer 30 minutes or until chicken is done. Remove chicken from broth, discarding broth. Let chicken cool; finely chop meat.

Combine chicken, cream cheese, and next 8 ingredients in a large bowl; stir well. Add green onions, purple onions, and jalepeno peppers; stir well. Slice each pita round horizontally to make 2 rounds. Spread chicken mixture evely over rough sides of pita bread rounds. Cut each round into 8 wedges, place wedges on ungreased baking sheets. Bake at 375 for 8 - 10 minutes or until bubbly. Garnish if desired. Serve immediately. Yeild: 96 appetizers

    Great! I played with the spices to suite our tastes and diced the peppers and onions because we prefer a smoother texture. - 2/8/09
