Ingredients

    1 lb - Trout
    20 spears - Asparagus, fresh or frozen
    1 cup - Carrots, sliced
    1 cup - Onions, sliced
    2 tbsp - Dijon Mustard
    2 tbsp - Vinegar
    1 tbsp - Honey
    1 tbsp - Olive Oil
    Kosher salt and pepper to taste

Directions

1. Heat oven to 350 degrees. Cut 4 large pieces of parchment paper.

2. Make vinaigrette: whisk together the olive oil, mustard, vinegar, and honey. Slice the carrots and onions. Cut the last 2 inches off the asparagus. Place vegetables in vinaigrette.

3. Cut the fish into 4 even portions, approximately 4 ounces each. Season with salt and pepper.

4. Divide vegetables into 4 equal portions and place on each sheet of parchment paper. Place one piece of fish on top. Then fold the paper to cover the fish and tuck the ends underneath like a neat little envelope. Place all four packages on a baking sheet and put in the over for 15-20 minutes.

Serve with whole wheat couscous, orzo, or brown rice.
