    1/2 cup spinach
    1 stalk celery
    3 slices fresh tomato
    1/4 cup grated carrot
    1/2 cup scallions
    1 oz grated low fat cheddar cheese
    1/2 cup Egg Beaters


Thaw 1/2 cup frozen spinach
Chop celery stalk- slicing thinly
Chop scallion (coarse is okay)
Dice tomato slices
Grate or chop carrot

Spray bottom of pan sparingly with veggie oil

Add vegetables over high heat and stir fry (al dente)
Add seasoning then reduce heat
Pour Egg Beaters over cooked vegetables and move around in pan to cook evenly.
When almost done add low fat cheddar.
