Introduction

OMG...how good can something be? 77 calories for a 1-inch square of this simple, simple fudge. 7.9 carbs for those counter's. EDITED 1/31/09: I reduced the powdered sugar from 1 pound box to 2.75 cups...makes it creamier. Ingredients

    1 cup Butter, room temperature
    1 cup Peanut Butter, smooth or chunky
    1 tsp Vanilla Extract
    2.75 cups Powdered Sugar, sifted

Directions

Mush together the room temperature butter and peanut butter in a larger microwaveable bowl. Microwave uncovered on high for 2 minutes. Carefully remove and stir. Microwave for an additional 2 minutes. Carefully remove and stir in the vanilla. Mix in the sifted powdered sugar. Press into a buttered or sprayed 8x8 glass dish, cover and refrigerate until set.
Add chopped nuts if you like it like that!

    I like the ease of this. I used a lower fat peanut butter and added two cups of chocolate chips (chocolate lover here). The calories are probably skewed but it came out great. - 2/8/09

    This sounds fabulous but I know there's no way I'd stop at one 1" square. Is it physically possible to cut an 8 x 8 pan into 64 pieces? Too much temptation! I might make this for a potluck. - 1/31/09

    Very, very tasty -- and a little goes a long way. But 1" squares are pretty small. I cut the pan into 1" x 2" squares (32 total). That doubles the calorie count (I assume), but that serving size seems about right for satisfying a craving without too bad of a calorie overload. - 6/1/09
