    1/2 large chopped onions
    Garlic to taste (3-5 cloves)
    1 tbsp grated ginger
    2 stalks scallions
    1 tbsp sesame Oil
    1 pkg firm Tofu
    1/4 c. Natural Peanut Butter
    1/2 c. coconut milk


Fry onions, ginger, and tofu in sesame oil until veggies tender and tofu lightly browned. Add garlic near the end so it doesn't burn. Add coconut milk and peanut butter, stirring until smooth. Add more coconut milk if sauce is too thick. Cook until sauce warmed through. Add cilantro and scallions and serve.
