Ingredients

64 oz. fat free chicken broth
1 egg
1 T. cornstarch
2 T. rice wine vinegar
2 T. lite soy sauce
4-6 spring onions, sliced thin
4-6 large mushrooms, sliced thin
pepper to taste
Optional ingredients: leftover cooked pork or chicken, sliced very thin; water chestnuts; bamboo shoots; thinly sliced carrots; tofu.
Directions
Blend 1 c. cold broth with cornstarch and soy sauce. Bring remaining broth to boil in a large pot. Beat egg lightly. Thinly slice onions and mushrooms. Add cornstarch mixture to boiling broth, bring back to a boil, then reduce heat. Pour egg in slowly, stirring constantly. Add vinegar, pepper, and slivered vegetables. Cook over medium heat only to heat through.
