This is a revised, healthier version of Andew's recipe.... This is a revised, healthier version of Andew's recipe....
Number of Servings: 4


    4 tbsp light margarine
    4 tbsp flour
    1 tsp mustard
    1 tsp salt
    1/2 tsp pepper
    1 cup nonfat milk
    1 cup shredded 2% cheddar cheese
    3 eggs separated
    1/2 tsp cream of tartar [may be omitted]

    Note: I typically double this recipe


Preheat oven to 350 degrees. Over low heat, melt butter and stir in flour. Add milk, slowly stir until it thickens. Add salt, pepper and mustard. Remove from heat. Immediately (and gently) add beaten egg yolks and cheese, Blend mix into beaten egg whites (beaten to stand in peaks). Pour into an ungreased 1-1/2 quart casserole dish. Set casserole in pan of shallow water and bake 50-60 min. or until brown and puffy. Serve immediately.
