Number of Servings: 4

Ingredients

    Olive Oil Spray
    2 bunches spinach (Thinly sliced and Washed)
    1 Tablespoon light thickened cream
    2 teaspoonds Dijon Mustard
    4 eggs
    2 Wholemeal english muffins - Halfed and toasted

Directions

1. Add Olive oil spray to pan and heat to medium heat.

2.Cook Spinach until leaves are slightly wilted

3. Stir in cream and mustard and simmer for 2 min.

4. Poach eggs.

5. Arrange Spinach on 4 muffin halfs and place poached eggs on top.
