Introduction

This is fast and easy. My 2.5 year old daughter helps me every time. I love to make it for friends coming over. And it is nice to treat yourself once in a while. Enjoy!!!

Number of Servings: 8

Ingredients

    1 ready to back pie crust
    7 cups fresh spinach
    2 TBS butter
    1 cup egg beaters
    2 TBS Half and Half
    3.5 oz package of smoked salmon
    salt and pepper optional

Directions

Preheat oven to 350
Cook spinach in butter
Mix all other ingredients in bowl
Add cooked spinach
Pour into pie crust
Arrange so salmon is evenly distrubuted and spinach is out to the edges of the crust.
Bake for 30-40 mins - check at 30
Let cool 15 mins before cutting and serving.

    The salmon seemed to be overwhelming. If I make again, I would halve the salmon and add another veggie like mushrooms. - 7/9/10

    thinking of making it but would hate to g buy a big slab of butter for it ... generally would like to use alternatives ... there's applesauce, but i dont think this has room for sweetness ... could make a chia seed gelatin, i do that sometimes instead of oil but not sure?
