Turkish rice pudding, modified to be a bit healthier. Turkish rice pudding, modified to be a bit healthier.
Number of Servings: 11


    1/2 cup brown rice
    2 cups water
    1 liter milk
    1/2 cups sugar
    1/4 cup cornstarch
    1 tsp vanilla or rosewater

    Note: I used a combination of 2% and nonfat milk because I was using up what was in the refrigerator. The recipe tastes best with whole milk, but will work with anything.


Boil rice with 2 cups water until the water is absorbed.

Reduce heat to low, and stir in milk and sugar. Gently boil 20-30 minutes.

Mix corn starch with enough water to make it soupy, and add it to the pot. Cook another 4-5 minutes.

Stir in vanilla or rosewater and remove from heat.

Dish pudding out into heatproof serving dishes, then place under a broiler for a few minutes until the top is brown.

I dish the pudding out into silicone muffin cups and freeze it in individual portions. Makes 11 muffin-cup sized servings.
